Born and raised in the United States to a family of Southern Italian heritage from Reggio Calabria, Chef Polo grew up surrounded by the flavors, traditions, and stories of his roots. A transformative journey to Southern Italy—visiting Melito di Porto Salvo and Pentidattilo, the villages of his ancestors, ignited a deep passion for authentic Italian cuisine.

It was there, at a young age, that he began learning the art of Italian cooking, preserving and refining the secrets of his family’s recipes passed down through generations. Now, he’s here to share those secrets with you through traditional recipes passed down through generations and modern techniques that make authentic Italian cooking accessible to everyone.

Marinara Sauce

The classic Italian tomato sauce

Ingredients

  • 4 cloves garlic, minced
  • Salt to taste
  • Black pepper
  • 1 can crushed tomatoes
  • Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add the minced garlic and cook until it becomes fragrant and begins to “jump” or lightly sizzle.
  3. Pour in the crushed tomatoes.
  4. Season with a sprinkle of salt, black pepper, and a light amount of Parmesan cheese.
  5. Reduce heat to low and let the sauce cook slow and steady, allowing the flavors to blend.
  6. Stir occasionally and simmer until ready to use.
